Translating to ‘Irish Oak’, the Dair Ghaelach range from Midleton distillery is dedicated to showcasing single pot still whiskies finished in locally sourced casks. This Chapter Four full set takes us to Kylebeg Wood on the Ballykilcavan Estate in Co. Laois, where seven trees were carefully selected to make 42 Irish oak hogsheads were then filled with 15 to 28-year-old whiskies and laid down for additional two years.
All bottled at natural cask strength, these rare expressions vary from one to the next as each of those oak trees exerts a different influence on the spirit. Common among them are autumnal notes reminiscent of woodland walks and falling leaves, zesty fruits, fudge and sweet vanilla. Velvety tannins balance the sweeter elements nicely, adding a welcome sense of texture and complexity.
